The Kampachi Company is proud to produce King Kampachi, the world’s firtst ASC-certified Seriola rivoliana product. The company's kampachi (also known as Almaco jack) is grown offshore in the deep, clear waters of the Gulf of California using innovative technologies.   The production process starts with local broodstock whose eggs are raised in a state-of-the-art hatchery. Once the larvae have developed into juveniles, they are transferred to offshore submersible pens where the fish thrive in their natural environment until they reach harvest size.    The Kampachi Company recognizes that since it controls the environment in which the kampachi develop, the business has an obligation to maximize their welfare. The company applies the latest scientific research to help improve processes affecting fish welfare.    Kampachi is a delicious, sashimi-quality marine fish. Not only can it be served as sushi and sashimi, but it can be prepared in a variety of ways as well — grilled, baked, smoked, and poached, to name a few.
