Founded in 2005, Acadian Sturgeon and Caviar is an Atlantic and shortnose sturgeon farm and fisher located in New Brunswick, Canada. After a short lived stint in Romania processing smoked trout, founder Cornel Ceapa became enamored with sturgeon after an afternoon fishing on the Danube River while working towards his PhD. After graduating, Cornel and his family moved to Canada where they took his passion for sturgeon, and his interest in providing a sustainable sturgeon alternative, and decided to open their own aquaculture facility!

A true family owned and operated business, Cornel works closely with his wife Dorina and son Michael to manage all aspects of the business - from caring for the fish, harvesting, salting and mixing the eggs, to smoking and packaging the meat for sale. While waiting ten years for their farmed sturgeon to grow to the right size to collect their eggs for caviar processing, Acadian Sturgeon and Caviar rely on wild-caught Atlantic sturgeon for revenue and market development. Catching up to 300 Atlantic sturgeon a year, all sturgeon are measured and tagged, with half of their annual catch being released to ensure the overall health and numbers of the wild population. The fish that remain are utilized in full, and are sold both for their meat as well as for their caviar. In addition to using sustainable fishing methods, their farmed shortnose sturgeon is Ocean Wise recommended.

All Acadian Sturgeon and Caviar products are packaged in-house, certified by the Canadian Food Inspection Agency, and then couriered to online customers, distributors, retail outlets and restaurants from St. John's to Vancouver. In addition to their packaged and value-added products, Acadian Sturgeon and Caviar also sells live sturgeon for aquaculture and restocking. The company ships fertilized eggs and larvae (recently hatched fish) for restocking in countries around the Baltic Sea (Poland, Germany, Lithuania, Estonia, Latvia) as well as to sturgeon farms in Europe, Asia and the United States. By selling live sturgeon to a global market, Acadian Sturgeon and Caviar is directly contributing to the repopulation of dwindling sturgeon stocks world-wide!
